Citrus asparagus with cheese and walnuts

Citrus asparagus

In healthy recipe today we use green asparagus season to prepare a vegetarian dish full of flavor. Themselves are only delicious, but with these citrus asparagus with cheese and walnuts will get them a different and delicious aromatic touch.

Asparagus is a gastronomic and very suitable for any type of diet gem. Rich in fiber and low in calories, they offer a significant amount of vitamins and minerals, and require no cooking fat. I like to serve them on a bed of fresh spinach sprouts, but you can choose another vegetable that you like more, like lettuce or arugula.
Ingredients for 2 people

200 g asparagus, 1 bunch fresh baby spinach, 6-8 walnuts, 20 g of feta or goat cheese, 1 handful of raisins, 1 lemon, 1 lime, 1/ 2 orange, 1/2 teaspoon mustard 1/4 teaspoon Worcestershire sauce 1/ 2 teaspoon apple cider vinegar, 3 tablespoons water, 1 teaspoon white wine, 1 teaspoon honey, 2 tablespoons olive oil, black pepper, salt.

How do citrus asparagus with cheese and walnuts

Squeeze juice of orange, lime and lemon, and arrange in a small saucepan. Add mustard, Worcestershire sauce, apple cider vinegar, water, white wine, honey and olive oil. Putting heat and let reduce for a couple of minutes.

Thoroughly clean the asparagus and cut the bottom ends ; peel them slightly if necessary. Heat some olive oil in a skillet or griddle over high heat and sauté until tender to taste. Wash the baby spinach and drain.

Arrange a bed of spinach on each plate or in a bowl. Arrange the asparagus. Add shredded cheese, raisins and walnuts. Dress with sauce and season to taste. Add some parsley or cilantro, if desired.

This healthy recipe of citrus asparagus with cheese and nuts can serve as a first course or as a light dinner. The cheese gives us protein and healthy fats nuts, but we can reduce the amount of these ingredients if you are doing a diet. It is a very rich both fresh from the iron plate as it cooled a bit at room temperature.
